Gutti Vankay is very popular Brinjal Recipe of Andhra and making Biryani for vegetarian with this masala gives excellent results
Hyderabadi Andhra brinjal biryani with masala brinjal
Ingredients;-
brinjal - 500gms
Peanuts - 2tbs
Sesame seeds - 1tbs
Dry coconut powder - 1tbs
Mustard seeds - 1tsp
Cumin seeds - 1tsp
Red chillies - 4 no’s
Fenugreek seeds - 1/2tsp
Curry leaves - 2springs
Chop onions - 1cup
Turmeric powder - 1tsp
Ginger garlic paste - 2tsp
Hing - pinch
Coriander powder - 2tsp
Red chilli powder - 2tsp
Cumin powder - 1tsp
Tamarind juice - 1/4 cup
Jaggery - 1tsp
Coriander leaves - 2 springs
Oil - as required
Salt - to taste
Basmati rice - 3cup
Biryani masala - 1tsp
Curd - 1cup
Mint leaves - 2springs
Green chillies - 3no’s
Ghee - 1tbs
method;-
Heat a pan add peanuts, roast in slow flame.
And add sesame seeds, dry coconut powder, and again roast it.
Transfer in to a mixie jar and make fine powder.
Heat a pan, add some oil, add brinjal pieces, and cook it half.
Transfer to a plate.
In the same pan add mustard seeds, cumin seeds, red chillies,
Fenugreek seeds, roast it.
Now add curry leaves, chop onions, salt and cook it.
Add turmeric powder, ginger garlic paste, hing, water, and mix it.
Add tamarind juice, some jaggery, fried brinjal pieces, coriander leaves
And put on the lid and switch off the flame.
Now transfer in to plate.
in the same pan add ghee, biryani masala, curd,mint leaves, green chillies,
Brown onions,and mix it.
Add cooked basmati rice, brinjal curry, some more basmati rice,
Brown onions, put on the lid and cook for 5 minutes on a low flame
