Normally, Samosa chaat is made from leftovers like Chole Curry, Ragda or I make it even when I have leftover boiled or cooked potato. Specially when I make Dosa, I mostly end up with some leftover Aloo Dosa Stuffing or when I prepare Dabeli and so on so to make use of leftovers, I go ahead and prepare chaat as I always keep chutneys ready in my freezer.
I also keep fried tortillas in my refrigerator to use in chaats and Mexican Bhel.
Tip: If you are a spicy eater, add some chopped green chili on the top to make the whole lot of difference to this chaat recipe.
