Learn how to make Dabeli Masala, big batch of chutneys like Khajoor Imli, & Lahsaniya or Lasuni Chutney. This recipe can be easily converted to Vegan by using non dairy butter or simply without any of it and for Gluten-free option, use gluten free buns.

When it comes to party, picnic, potluck or big batch cooking, I prefer to break apart preparations. For example, few recipes can be made ahead of time and refrigerate or freeze if making in a big batch to use later in recipes. For making Dabeli, chutneys like Garlic (Lahsan) and Date Tamarind chutney can be prepared even a week ago and store in refrigerator.

Dabeli is perfect to pack in lunchbox as well.
I prefer to use yeast rolls or butter rolls buns for this recipe.
Garlic (Lahsan) Chutney:
1/4 cup Oil (Tel)
1/2 cup Garlic (Lahsan), Crushed
1/2 cup Red Chili (Lal mirch) powder
1 tbsp Pavbhaji Masala, optional
1 tbsp Ground Coriander (Dhaniya)
1/4 tsp Ground Cumin (Jeera)
1/2 tbsp Salt (Namak) or as per taste
1/2 tsp Black Pepper (Kala Mari) or to taste
1/4 to 1/2 cup water or as needed

Dabeli Masala Powder Mix:
1 tbsp Dhaniya (Coriander Powder)
1/2 tbsp Jeera (Cumin) Powder
1/4 tsp Haldi (Turmeric)
1/2 tsp Daal Chini (Cinnamon)
1/4 tsp Long or Laving (Cloves)
1/2 tsp Chaat Masala
1 tsp Amchoor (Dry Mango Powder)or Anardana can be used

Date Tamarind Chutney:
½ cup seedless tamarind ( imli)
½ cup seedless dates (khajoor)
½ cup jaggery (gur)
Optional Dry Fruit ingredients like couple of Apricots & 1/4 cup Golden Raisins can be added
2 to 3 cups water 1
tsp coriander powder (dhaniya powder)
½ tsp cumin powder (jeera powder)
½ tsp fennel powder (saunf powder)
1 tsp kashmiri red chili powder (lal mirch powder)
½ tsp dry ginger powder (sonth- saunth powder)
Salt (Namak)to taste

Aloo Masala Stuffing (in pressure cooker)
2 Onions (Pyaz)
4 Potatoes (Aloo)
2 tbsp Oil
1 tbsp Cumin Seeds (Jeera)
Salt to taste
1/4 to 1/2 cup water
1/4 cup Dabeli Masala Mix
Sugar to taste
1 tsp Fennel (Sauf or Variyali)
