Let me clarify, the original cassata is very different from the Cassata ice cream served in ice cream parlors in India. In India, 'cassata' refers to a layered ice cream,[14] similar to Neapolitan ice cream, with three flavors, usually pistachio, vanilla, and strawberry, on a base of sponge cake, topped with chopped nuts.

I prepare this recipe Indian way by using two layers of cake and three layers of ice creams topped with lots of dry fruits nuts and glazed cherries. I am using additional layer of ice cream, mango. If you are a chocolate lover, use chocolate ice cream so basically, your favorite ice creams flavors can be used. To me personally, strawberry, pistachio and vanilla ice creams make the best Cassata Cake.

When I want to prepare recipes for the crowd, I prefer to use some ready store bought ingredients to save time in the kitchen. For example, buy ready cake mix to prepare the cake layer and some shop ice creams like vanilla and strawberry ice cream can be easily found cheaper where I live. Sometimes, I buy the huge container of plain ice cream and just add flavors to it like pistachio, Mango or any Indian or other flavors can be infused into the plain ice cream. So I call this recipe, a short cut recipe.

Ingredients to prepare the Cassata Ice cream Cake
1 box of yellow cake mix (3 eggs, 1/2 cup oil, 1 cup water for cake mix)
1.5 qt Strawberry ice cream
1.5 qt Mango Ice cream, optional
1.5 qt pistachio ice cream
1/5 qt vanilla ice cream
1/2 cup dry fruit nuts
1/2 cup Tutti fruity
1/4 cup glazed cherries
