Ingredients and Method
1 cup basmati rice
2-3 tbsp oil
1 tsp cumin seeds
1/2 small chopped onion
1 cinnamon stick
1 bay leaf
1 black cardamom
4-5 green cardamom
4-5 black peppercorn
4 cloves
1 cup peas
1/2 tsp salt and turmeric ( optional)
Method:
- Heat oil and let cumin seed sizzle for 30 secs.
- Add black cardamom, green cardamom and other spices. let them crackle for 1- 2 mins
- Add onions and mix well. add salt and turmeric.
- Add rice, peas and water. Cover the pot and cook for 10-12 mins untill water has evaporated and rice done. Dont overcook otherwise they turn mush.
- As soon as water dries up, turn the heat off and keep rice covered ( so that steam can further cook them. ) Fluff with fork and serve. Remove the spices as they are not meant to be eaten.
