Method: Choose vegetables of your choice and cut them in big chunks. For this dish, I used potatoes, Red Peppers, Mushrooms, Leeks, Carrots, 4 garlic cloves and broccoli. Grease your baking dish. Add in all the vegetables. Season with your favourite spices (salt, pepper, garam masala, basil, oregano, parsley etc) Add 2 tbsp of olive oil on top. Mix veggies well together. Cover with the aluminium foil and bake at 400 F- 415 F for 30-40 mins.
