Ingredients/ Method
2 tomatoes
1/2 cup onions
2 tbsp ginger
200 gms cabbage
2-3 tbsp oil for cooking
1 tsp cumin seeds, 1 tsp coriander and 1/2 tsp fennel seeds for making Powder. We will use 1 tsp of this powder in the beginning and 1/2 tsp in the end.
1 tsp salt
1/2 tsp paprika
1/2 tsp pepper powder
Garnish with green onions
3-4 cups of vegetable broth ( you can substitute with water or make your own broth as well)
Method:
Heat oil in a pot/wok/saucepan. Add ginger.
Add onions. Quickly stir them.
Add 1 tsp of cumin/coriander/fennel powder.
Add 1 tsp salt.
Add paprika. Let onions fry for 3-4 mins.
Add chopped tomatoes. After few mins, add cabbage.
Saute cabbage for 3-4 mins.
Add veg broth. Bring broth to boil. Let it simmer.
Finish off with pepper and cumin/fennel/coriander powder.
Garnish with green onions and serve.
