Learn how to prepare Roasted and curried Squash soup using vegetable marrow. This is a quick and easy recipe with wonderful flavor. This perfect fall Soup recipe is a must try for all soup lovers.
Ingredients:
1/2 Vegetable Marrow
Sea Salt (as per taste)
1 tsp Curry powder
1 tsp Black Pepper pwd
Cup of milk
4-5 cloves of garlic
2 tsp sugar
1. Cut marrow in half and peel the skin.
2. Cut in small pieces and season with salt, pepper and curry powder
3. Roast in the grill on med. high for 25-30 mins along with garlic cloves.
4. Once char marks appear, transfer in the blender and blend along with garlic cloves and some milk.
5. Heat 2 tbsp oil in a pan and transfer blended puree. Add milk as required. Let simmer for 5 mins and serve.
