Sev Usal (Sevsar) is medley of various sweet, spicy and tangy flavours which is made from peas, Indian spices and garnished with besan sev(Fried Chickpea flour Noodles).
Let me show you my unique way of making and serving Sev Usal. My family don't really enjoy only matar ragda (Peas Curry) so I add aloo (Potato) in my Sev Usal ragda. I am sure, once you try my way of making this dish, you will always want to make it this way!

Ingredients for Sev
1 cup besan / gram flour
¼ cup rice flour - Optional
¼ tsp turmeric / haldi
pinch of hing / asafoetida - optional
½ tsp salt
¼ cup water + 1 tsp Lemon juice if desired
oil for deep frying

Ingredients for Ragda: (I prefer to make in pressure cooker but can be cooked in regular pot) FYI this ragda can be used for Ragda Petis, Bhel and many other recipes
Dried green peas - ½ cup
Onion - 1, chopped
Tomato - 1, chopped, optional
Potato - 1 - 2, boiled, peeled, and chopped, as per liking
Green chili - 1-2, as per taste
Curry leaves - 1 spring
Ginger - 1 inch
Garlic - 4 - 5
Turmeric powder - ¼ tsp
Red chili powder - ½ - 1 tsp, as per taste
Coriander powder - 1 tsp
Garam masala - ¼ tsp
Salt - 1 or more, as per taste
Jaggery - 2 tbsp, optional but I find it necessary to add in ragda
Oil - 1 - 2 tbsp
Coriander leaves - ¼ cup, chopped

For toppings:
1/2 cup finely chopped onion
1/2 cup finely chopped tomato
Coriander leaves
Sweet chutney - for serving
Some people also add yogurt as topping.

Usually Tari (spicy water) is made but I simply make chili water to drizzle over my Ragda
simply mix 1/4 cup of hot water with mild chili like paprika or kashmiri and ready to use in chaats.

Sev Usal is one of the known cuisines in the western part of India. Specifically, it is special street food in Vadodara, Gujarat which is one of the major city after Ahmedabad in Gujarat state. Recipe: 1.Onion & tomato ki Tikki Chutney Recipe: Take 3tbsp of oil & add 1tbsp onion puree. saute onions till it leaves the oil.after that add 1tbsp of tomato puree and saute it for few seconds.add 1tbsp ginger garlic paste, 2tbsp red chilly powder(as per your taste),1/2tbsp coriander powder, salt as per taste and saute all for few seconds .and your teekhi chutney is ready.
