Spice your regular rice dish with these Southwestern style flavours. Its full of protein as we use beans. Beans used could be from a can or you can boil some of your own. This could be a great snacking option, lunch item or served for dinner.

Ingredients/ Method
2 cups Rice
1 cup cooked beans
1/2 cup onions
1/2 cup corn
1 cup red peppers
Oil to cook
1 tbsp Garlic paste/ Crushed garlic
Cilantro for garnish
Seasoning - Salt, paprika, Red chilli powder, Coriander powder Oregano, Turmeric and garlic powder ( adjust as per quantity you are cooking)
- Saute onions in a pot. Add spices. Add garlic. Mix well. Add corn and peppers. Saute for another 2 mins. Add rice. Add water and cook until done. You can also replace water with veg broth or chicken broth.
Once rice are done. Mix in beans as shown in the video. Garnish and serve.
