Ingredients:

Servings 2

Cooking rice:
Rice 1/2 Cup
Water 6 Cups
Salt 1 1/2 Tsp
Oil 2 Tsp

Cooking eggs:
Egg 3
Salt (As needed)
Pepper powder 1 Tsp
Oil 1 Tsp

Stir frying:
Oil 2 Tbsp
Garlic 5 Cloves (Finely chopped)
Green chilli 1 (Finely chopped)
Spring onion (White part) 2 Tbsp (Chopped)
Carrot 1/4 Cup (Chopped)
Beans 1/4 Cup (Chopped)
Cabbage 1/4 Cup (Chopped)
Soy sauce 1 Tsp
Chilli sauce 1 Tsp
Lemon juice (From 1/2 lemon)
Salt
Spring onion (Chopped)

*Boil 6 cups of water and add 1/2 cups of rice (Soaked in water for 10-15 minutes).
*Cook for 5-8 minutes. Rice should remain nutty. If the rice is 80% cooked, remove from heat and drain the water completely. leave it to cool down.
*Cook 3 eggs in oil with salt and pepper and keep aside
*Heat kadai and add oil. Add garlic and green chilli. Saute.
*Add Onion, carrot, beans, cabbage
*Fry for few seconds (Do not overcook)
*Add soy sauce, Chilli sauce, lemon juice, salt and mix
*Add cooked rice and fry the rice on high flame for few minutes
*Add chopped spring onion and serve hot

Tips and tricks:

1.Do not overcook the rice:
For perfect fried rice, rice shouldn't loose its nutty texture.
2.Use cold or chilled rice:
Cook the rice and let it completely cool down. Or even refrigerated rice will be perfect for fried rice.
3.Never use hot rice in fried rice
4.Do not overcook the vegetables:
Vegetables should remain crunchy in fried rice.
5.Use high heat:
Always use high heat for stir frying the veggies and rice.
6.Prepare:
Prepare everything before stir frying. As we are using the high heat there is a chance of burning the veggies. And to avoid overcooking.
7.Rice quantity:
As we are adding more vegetables and eggs 1/2 cup of rice will be fine for 2 servings
8.Cook in batches:
If you want to make more quantity, stir fry in batches
9.Frying rice:
Frying rice is one of the important step in making perfect fried rice.
