Raw Jackfruit is a very popular vegetable in the tropical regions of the raw jackfruit recipes are plenty and my favourite is jackfruit biryani, jackfruit pakoda and also jackfruit curry
JACKFRUIT PULAO recipe

ingredients;-
Jack fruit seeds - 1cup
Jack fruit pieces- 1cup
Oil - 2tbs
Whole garam masala -
Onions - 1c
Turmeric powder- 1/2 tsp
Mint leaves - 1/2cup
Green chillies - 4
Ginger garlic paste -1tsp
Curd - 3Ttbs
Red chilli powder -1tsp
Coriander powder - 1/2tsp
Cumin powder - 1/2tsp
Garam masala - 1/2tsp
Basmati rice - 1cup
Lemon - 1tsp
Saffron water - 1tsp
Coriander leaves -1/2cup
Brown onions -1/2cup
Salt - as required
method;-
First cut the jack fruit in to medium
size pieces. then boil in hot water.
Separate the seeds and pieces.
Heat a pan add oil, whole garam masala,
jack fruit seeds, add some salt
mix it nicely. add turmeric powder
mint leaves, green chillies,
ginger garlic paste, curd, Red chilli powder
coriander powder, cumin powder, garam masala,
jack fruit pieces, some more salt and mix it again.
Then add boiled rice, lemon juice, saffron water.
In the last add coriander leaves, brown onions
and cook for 5 minutes.
Transfer in to a plate and serve hot.
JACK FRUIT PAKODA
ingredients;-
Jackfruit pieces -1cup
Onions - 1cup
Ajwain - 1/2tsp
Fennel seeds - 1/2 tsp
Green chillies - 2
Chickpea flour - 1c
Rice four - 1tbs
Coriander leaves - 1tbs
Water - as required
Oil - for frying
Salt - to taste
method;-
Take a bowl add jackfruit pieces, slice onions,
ajwain, crush fennel seeds,
chopped green chillies, Chickpea flour,
some rice flour, coriander leaves, some oil,
some salt and mix it nicely. keep a side.
Then sprinkle some water, and mix it again.
Heat oil in a pan, take some mixture drop in to
hot oil, like pakoda and fry on medium flame.
Transfer in to a plate, and serve hot.
JACK FRUIT CURRY
Ingredients;-
Jackfruit seeds -1cup
Jack fruit pieces - 1/2cup
Whole garam masala
Fennel seeds - 1tsp
Onion - 1c
Curry leaves -1spring
Round green chillies - 8
Ginger garlic paste - 1tsp
Turmeric powder 1/2 tsp
Mutton masala - 1tsp
Tomatoes - 1c
pepper powder - 1tsp
Coriander leaves - 1/2c
Salt - as required
Oil - 2tbs
method;-
Heat oil in a pan, add whole garam masala,
Fennel seeds, chopped onions, some salt and
mix it.
Get the nice colour, add curry leaves,
round green chillies, ginger garlic paste,
turmeric powder, coriander powder, chop tomatoes,
add pepper powder, some water, mutton masala, and
cook for few minutes.
After add jackfruit seeds and pieces, coriander leaves,
add some more pepper powder and cook for 5 minutes.
serve with rice or roti
