Here is an easy recipe for Potato salad which is great for late night snacking, Afternoon salad or for sharing with friends. It's quite versatile because you can customize it to suit your own taste.

Ingredients/Recipe
5-6 potatoes
(I used Red variety)
1 cup of boiled beans
Spices that you like or you want to experiment with: I used Sage, Rosemary, Paprika, Salt and Garlic salt
2 tbsp oil
1 tsp cumin seeds
2-3 tbsp chopped onions
For Indian taste, you can use curry powder or garam masala as a spice to roast potatoes
Dressing: Any that you like or simply go with lemon juice. I have suggested few different ideas int he video for the dressing.
Method: Wash, peel and chop potatoes into bite size pieces. Place on a baking sheet lined with aluminium foil and bake at 400 F for 25-30 mins. In a pan, saute onions with salt and cumin seeds and add boiled beans. Cook for 2-3 mins and add into cooked potatoes ( after transferring them in a bowl when they are no longer hot)
Dress with lemon juice, can also add fresh chopped cilantro and tomatoes if you wish. Enjoy!
