Kozhi Thalayana Recipe
Chicken (finely chopped)
Ginger (finely chopped) – ½ spoon
Garlic (finely chopped) – ½ spoon
Onion– 2 (chopped)
Green chili (fine chopped) – ½ spoon
Tomato – 1 (finely chopped)
Coriander Leaves (finely chopped) – 1 spoon
Mint (Pudina) Leaves (finely chopped) – 1 spoon
Pineapple (finely chopped) – 1 spoon
Sweet Cumin Seeds – ¼ tsp
Ghee – as required
Salt- as required
Turmeric Powder – ¼ spoon
Coriander Powder- ½ spoon
Cardamom Powder – ¼ spoon
Garam Masala – ½ spoon
Milk Cream – ½ spoon
Wheat flour – 2 ladle
Maida – 3 ladle
Dalda – 1 spoon
Grape Sauce – as required
Sauté sweet cumin seeds in ghee. To this add ½ spoons each of finely chopped ginger and garlic, 2 big spoons of chopped onion, green chili, and continue sautéing till the onion is golden in colour. Now, make a little space in the pan to sauté ½ a spoon of ginger-garlic paste and then combine the whole sautéed ingredient together. To this, add ¼ spoon turmeric powder, ¼ spoon sweet cumin powder and ½ spoon coriander powder. Stir mix for a while, then add chopped tomato and sauté well. Sprinkle little water to let the tomato cook well. Add the fine chopped chicken and a little salt and go on sautéing till it becomes a fine roast. Add 1 spoon each of fine chopped coriander leaves, mint leaves and pineapple. Mix well. Add cardamom powder, garam masala and milk cream. Stir and mix well. Remove the prepared mixture from flame.
For the dough: Mix wheat flour, maida, a little salt and dalda together. Add required water and knead to get a smooth chappathi like dough. Leave this for 2 minute.
Roll chapattis of the dough. Stuff the chicken mix in it. Pour a little grape sauce. Stick together the stuffed chapatti and make pillow-like roll by cutting off the edges. Fry these stuffed pillows in vegetable oil.
