Cashew Nuts

Sugar
Ghee (optional)

Few tips and tricks for you to make perfect Kaju katli:

1. Keep the cashew (Kaju) in the refrigerator to cool it before grind it.
2. Don’t over-grind the cashews: if you do that, cashews will release oil and its not good for Kaju katli recipe.
3. Sieve the Cashew ground to remove the big chunks to achieve the perfect texture.
4. Keep the heat low when needed and keep stirring at all times.
5. Little ghee to the end will bring Kaju katli flavor, smooth and melting texture. But adding ghee is optional.
6. Cook until the mixture leaves the sides, check for desired consistency and remove from flame on time.
7. Make sure it cooked perfect consistency before remove from flame. If Kaju katli under cooked, the katli will not set.
8. Test a small piece of final dough mixture and make a small ball in the shape of pearl. It should retain the shape and shouldn't be sticky.
9. If kaju mixture sticky and not shaping, cook for few more minutes to achieve the consistency needed.
10. Make it thin while rolling the kaju katli mixture and allow it to cool down.
