Learn how to combine flavours of Beetroot with coconut in this flavourful dish. This coconut beetroot masala is an awesome side and can be enjoyed with rice or different Indian breads.
Enjoy it with Lemon Rice:
Ingredients:
2 cups chopped beetroot (we used golden variety)
1 cup shredded coconut
1/2 cup tamarind juice
1/2 tsp turmeric
1 tsp salt ( adjust per taste)
2 tbsp soaked yellow lentils
1 tsp Mustard seeds
10-12 curry leaves
1 dried red chilli
1 tbsp salt
1/2 tsp roasted cumin powder
2 tbsp oil for cooking
Method:
1. Heat oil in a pan and add mustard seeds.
2. Let the seeds splutter for 30 secs and then add crushed red chilli and curry leaves.
3. Next, add puffed up lentils (Lentils should be soaked in water for about 20 mins). Fry them for about 2-3 mins.
4. Add beetroot, Salt and Turmeric. Mix well. Cover the pan and let beets cook for 5-6 mins until they are tender.
5. Once beets are soft, mix in coconut ,sugar, cumin pwd and tamarind juice. Mix well and let stand for 2 mins before serving.
