*********INGREDIENT LIST**********
500 g bottlegourd doodhi, washed, peeled and chopped
1 cup split gram chana dal soaked for 1 hour
1/2 tbsp ginger paste
1/2 tsp turmeric powder haldi, divided 1/4 tsp for tadka
2 cup water or as needed
salt as per taste
FOR TEMPORING:
1 tbsp Ghee or oil can be used
1/2 tsp mustard seeds rai
1/2 tsp cumin seeds jeera
1/4 tsp asafoetida hing
1 stem Curry Leaves
2-3 Green Red Chillies, split
1/2 tbsp garlic paste
2 tsp coriander cumin powder dhania jeera powder
1 tsp red chili powder or as per taste
FOR GARNISHING:
1 tbsp Coriander Leaves (Hara Dhaniya)
PARATHA Ingredients
For the Dough:
2 cups whole wheat flour
1 tablespoons oil
1 cup water plus additional 2 to 3 tablespoons if needed.
Seasoning:
1 tsp Salt
1 tbsp Sugar
1 tsp Cumin powder (Jeera)
Rolling:
1 cup whole wheat flour
4 tablespoons ghee use oil for vegan variation
Cooking:
2 tablespoons oil if desired or else roast paratha without oil
