Muthiya can be made crispy by using shallow fry, deep fry or air fry method. I prefer shallow fry with very less oil or air fry by brushing the muthiyas with oil.

Note: This recipe can be converted into vegan by using soy yogurt by simply leaving out yogurt entirely from the recipe.
To prepare this recipe gluten free, use rice rava.
INGREDIENTS:
1 cup flour of your choice (I mix 1/2 cup Rava, 1/4 cup besan, 1/4 cup Jowar or corn flour)
Finely chopped or shredded vegetables of your choice (I love Cabbage + Spring onion And Suva or methi bhaji muthiyas)
1.5 cups water or as needed
1/2 tsp Cumin seeds
1 tsp ground coriander cumin
1/4 tsp Turmeric powder
1/4 tsp red chili powder, if desired
Salt to taste or 1 tsp
1 tbsp ground peanut
1 tbsp sesame seeds + 1 tbsp for garnishing
1/4 tsp Baking soda if available
ginger, garlic & green chili as per taste or 1 tsp each
2 tbsp oil
2 tbsp yogurt
2 tbsp more oil to shallow fry muthiyas
