Healthy, Farm Fresh Produce that I have been getting this summer has inspired me to make this nutritious and tasty meal. To be honest, my family is not a big Marrow Squash fan so to get them to eat it, I make this easy stuffed marrow squash dish. You can easily customize it to suit your own taste by adding variety of spices in the stuffing which consists of sauteed onions, cauliflower, tomatoes, spices, green onions and garam masala topped with bread crumbs and cheese.

Ingredients and Method
- Half of Large Marrow Squash
For Stuffing, I used
- 2 tbsp oil
- 1/2 tsp cumin seeds
- Salt ( per taste)
- 1 small chopped onion
- 2-3 med size tomatoes, I had 5-6 small ( almost like cherry tomatoes)
- 1 cup cauliflower ( small pieces)
- 1/2 to 1 tsp red chilli pwd
- 1/2 tsp turmeric
- 1 tsp ginger garlic paste
- 2 tbsp green onions
- 1/2 tsp garam masala
To top up the stuffing, I used bread crumbs and soya cheese ( Mozzarella and cheddar are good options or infact any cheese you like)
Method:
Peel the skin of marrow squash. Preheat oven to 375 F. While it is preheating, prepare the stuffing by sauteeing onions with cumin seeds, salt, red chilli pwd, salt and ginger garlic paste. Add cauliflower and tomatoes. Cook for 3-4 mins and then add green onions and garam masala. Mix well together and then pour over the squash. Cover the baking pan with aluminium foil and cook for 45 mins ( or until squash is tender). Remove the foil. Top up with bread crumbs and cheese and cook further for 5-6 mins. Then let rest for 5 mins and serve. Liquid on the side can be poured over the squash as a sauce.
