Khasta kachori is a delicious, spicy, deep fried puffed pastry. Texture of kachori is crispy and flakey outside and softer with smooth stuffing and hollow inside. Kachori should be fried on low heat so it can cook through to have a nice crunch. Serve kachori with tamarind chutney, green chutney or red chili garlic chutney.

Ingredients for Khasta Kachori:

2 Cups refined flour
1/4 cup gheeto
taste salt
cold water (to mix)
for deep-frying oil
For the filling:
3/4 cup black gram (husked), soaked
2 tbsp oil
1 tsp cumin seeds
1/8 tsp asafoetida (hing)
3/4 tsp garam masala
3/4 tsp chilli powder
2 tbsp fennel seeds, powdered
2 tsp coriander powder
to taste salt
1 1/2 tsp mango powder
