Mexican Rice is an easy complete dish, ready quickly and has protein as well as carbohydrates. Great idea for weekday dinners.

Ingredients/Method
1 cup uncooked beans
2 cup brown rice
2 tbsp oil
1 small onion
1 tbsp garlic
1 tsp cumin seeds
1.5 cup corn and bell peppers
salt per taste
1 tsp red chilli powder or paprika
2 tsp taco seasoning
1 tsp cumin powder
Cilantro for garnish
5 cups water.
Method:
Soak beans in water overnight or use canned beans.
Heat oil in pressure cooker. Add cumin seeds. Let them sizzle.
Saute onions. Mix in Corn and peppers. Add minced garlic. Add all other spices and brown onions. Add rice and brown them as well.
Add water ( 5 cups). Cover and pressure cook for 3-4 mins.
Once cooled down- open the cooker and garnish with cilantro leaves.
