Ingredients:
2 cup grated carrots
1/2 cup whole wheat flour
3/4 cup quick cooking oats
3/4 cup unsweetned coconut flakes ( I used dry but you can also use fresh grated coconut)
1/2 cup sugar
1 tbsp baking powder
1/4 tsp salt
1/2 tsp ground ginger
1/4 to 1/2 tsp nutmeg
1/2 to 1 tsp cinnamon
1/2 tsp Kewra ( Essence of Pandan leaves) used in Indian sweets ( you can also use regular Vanilla essence) This lends a lovely flavour to the muffins
1 egg
1/3 cup oil
1/2 cup milk
Method:
- Peel and grate fresh carrots and set them aside.
- In a large bowl, add flour, oats, coconut flakes and sugar. Mix well and add baking powder, salt, spices and carrots
- Add carrots and set aside
- In another bowl combine egg, oil, milk and kewra and mix wet ingredients with dry.
- Preheat oven to 375 F and line a muffin tray with baking cups. Pour batter in them and cook for 15-20 mins.
Enjoy while warm or if refrigerated heat and eat with a cup of nice Chai Tea.
