Ingredients:
Badam (Almonds): 1 cup [00:59]
Ghee: 4 tbsp [01:53]
Sooji (Rava): 1 cup [02:11]
Paneer (Indian Cottage Cheese): 1 cup [03:45]
Sugar: 3/4 cup [04:02]
Milk: 1/2 cup [04:47]
Cardamom Powder: 1 tsp [05:04]
Pista (Pistachio) and Badam (Almonds) for garnish [06:08]
Instructions:
Prepare the Almond Powder: Grind 1 cup of almonds in a food processor using the pulse mode to create a fine powder [01:08].
Roast Sooji and Almond Powder: Heat a pan with 4 tablespoons of ghee, add 1 cup of sooji, and roast on low-medium flame until golden brown [02:18]. Add the almond powder and roast for another minute [03:18].
Prepare Paneer and Sugar Mixture: Grind 1 cup of paneer and 3/4 cup of sugar in a separate grinder until smooth and creamy [03:55].
Combine Mixtures: Add the paneer and sugar mixture to the roasted sooji and almond powder. Mix well, then add 1/2 cup of milk and 1 tsp of cardamom powder. Continue mixing until the mixture leaves the sides of the pan [04:28].
Set the Barfi: Transfer the mixture to a ghee-greased tray and press into an even layer [05:15]. Let it set at room temperature or in the refrigerator for 15-20 minutes [05:34].
