Dhanshak
Ingredients:-
Coriander seeds- 1 tsp
Dry red chillies - 4
Cinnamon stick - 1
Pepper - 1 tsp
Fenugreek seeds - ½ tsp
Kasoori methi - 1 tsp
Dil leaves - ½ cup
Bay leaf - 1
Pumpkin - 1 cup
Potato - ½ cup
Brinjal - 1 cup
Moong dal - ½ cup
Chana dal - ½ cup
Masoor dal - ½ cup
Onions - ½ cup
Tomatoes - ½ cup
Soya nuggets - ½ cup
Tamarind juice - ½ cup
Ginger garlic paste - 1 tsp
Jaggery - 1 tsp
Salt - to taste
Oil - as required
Ghee - 1 tsp
Water - as required
Method:-
Heat a pan, add coriander seeds, red chillies, cinnamon stick,
Pepper, cumin seeds, fenugreek seeds, kasoori methi, dil leaves,
And just roast it. Transfer it a blender and grind into fine powder.
Heat pressure cooker, add oil, bay leaf, pumpkin pieces, potato pieces,
Brinjal pieces, and add moong dal, masoor dal, chana dal, onions,
Ginger garlic paste, tomato pieces, and also add some water, some
Salt, put on lid and cook for 3 visils.
Now add soya nuggets, tamarind juice, some more salt, grinded
Masala powder, and mix it nicely.
Add some more water, ghee, jaggery. And mix again.
Pumpkin vada
Ingredients;-
Chana Dal (Soaked) - 1 cup
Grated pumpkin - ½ cup
Ginger (Grated) - 1 tsp
Onions (chopped) - ½ cup
Cumin seeds - 1 tsp
Fennel seeds - 1 tsp
Green Chillies (chopped) - 1 tsp
Hing - pinch
Garlic (chopped) - 1 tsp
Turmeric powder - ½ tsp
Coriander Leaves - 1 tb spn
Garam masala - ½ tsp
Curry leaves - 2 sprigs
Salt - to taste
Oil - as required
Method;-
First soaked Chana dal for 1 hour.
Then transfer into a Blender and blend into a coarse paste.
Add it to a bowl, add some grated pumpkin, chopped onions,
Crushed cumin seeds, fennel seeds, chopped green chillies,hing,
Chopped garlic, turmeric powder, chopped coriander leaves, garam masala.
Some salt and mix it well.
Now make flat vada and fry in hot oil.
Pumpkin sweet rice
Ingredients;-
Grated pumpkin - 1 cup
Rice (Boiled) - 1 cup
Onions (Sliced) - 1cup
Sugar - 1 tsp
Coriander leaves - 1 tb spn
Salt - to taste
Oil - as required
Method:-
Heat a pan add oil, sliced onions, some salt and cook
till it is brown. Now add sugar, grated pumpkin,
And mix it.
Add some coriander leaves, boiled basmati rice,
and saute it well.
Now transfer into a plate and serve hot
