Got leftover khichdi in the fridge? Don’t throw it away! Today, I’m turning this humble leftover into a creamy, nutritious Spinach Soup you’ll absolutely love. Quick, easy, and packed with flavor. I like mine with Tadka but if you wish to make simple way, follow the recipe below:
All you need is:
• 1 cup leftover khichdi
• A handful of fresh spinach
• 1 garlic clove, minced
• 1 tsp butter or oil
• 2 cups water or vegetable stock
• A dash of black pepper, chili flakes, and salt to taste
• Optional: A splash of cream for extra richness!
Cooking Steps
1. Heat it up: “In a pan, melt a teaspoon of butter or heat oil. Toss in the minced garlic and sauté till fragrant.”
2. Add the greens: “Add your spinach and cook until it wilts. Just 1-2 minutes!”
3. Mix the magic: “Now, add your leftover khichdi. Pour in the water or stock and stir well.”
4. Blend it smooth: “Let it simmer for 5 minutes, then use a hand blender to make it silky smooth. If you like it chunky, skip the blender!”
5. Season to taste: “Add black pepper, chili flakes, and a pinch of salt
Optional: Drizzle some cream to make it irresistible!
