These cupcakes stays great at room temperature for up to 3 days and I keep frosting in refrigerator so just decorate before the event start.
Ingredients:
11/2 cups Cake flour or Plain Flour
1 tsp Baking powder
1/2 tsp Baking soda
2 tbsp Egg replace powder if available
A pinch of Salt
1/2 cup oil
1/2 cup Plain Yogurt
3/4 cup Granulated Sugar
1 tbsp Vanilla extract
1 tbsp Cocoa powder
1/2 cup Chocolate chip
For the Frosting:
1 tub 8 oz of Cream Cheese or Mascarpone Cheese
2 cups Heavy Whipping Cream
1/2 cup Icing sugar
Flavors and color can be added.
