Healthy Bars
2 ripe Bananas
3/4 cup Almond flour
1/2 cup to 3/4 cup chocolate chips - I used Dark unsweetned ones
3/4 cup quick cooking oats
3/4 cup shredded coconut- unsweetned
Mix them all together and bake for 12-15 mins at 400 F. Let cool. Cut and eat.
2. Dates Fudge
1 cup pitted dates
3/4 cup walnuts
2 tbsp peanut butter
2 tbsp cocoa powder
Grind Dates with all other ingredients. Combine them all and then tightly pack on a baking sheet/ greased plate etc and let chill for 15-20 mins before cutting into squares. Can last in the freezer for a month if individually wrapped.
3. Energy balls
1 cup dates
1/3 cup Pistachios- crushed
1/2 cup Sunflower and Pumpkin seeds ( coarsely ground)
- Grind dates and then combine with the other ingredients. Mix well and then form golf ball sized ladoos. Let chill and then enjoy.
