[00:29] 250g Green Chillies (Hari Mirchen)
[01:34] 2 tsp Red Chilli Powder
[01:40] 1 tsp Turmeric Powder (Haldi)
[01:40] 4 tbsp Coriander Powder (Dhania)
[01:50] 1 tsp Cumin Powder (Jeera)
[01:50] 2 tsp Coarsely Ground Fennel (Saunf)
[01:56] 1/2 tsp Black Salt (Kala Namak)
[01:56] 1/2 tsp Garam Masala
[02:02] 3 tsp Dry Mango Powder (Amchur)
[02:14] 1/2 tsp Kasuri Methi (Dried Fenugreek Leaves)
[02:28] 1/2 tsp Asafoetida (Hing)
[02:35] 1 tbsp Mustard Oil (Sarson ka Tel)
[02:59] 4 tbsp Gram Flour (Besan)
[03:35] Prepared Spice Mix
[04:04] Salt (to taste)
[04:57] 2 tbsp Mustard Oil
[05:22] 1 tsp Mustard Seeds (Sarson)
[05:22] 1/2 tsp Cumin Seeds (Jeera)
[06:12] Leftover Stuffing Masala
[06:51] Lemon Juice

Method
[00:45] Wash, dry, and slit the green chillies.
[01:32] In a bowl, combine all dry spices: red chilli powder, turmeric, coriander, cumin, fennel, black salt, garam masala, amchur, kasuri methi, and hing.
[02:19] Mix the dry spices well.
[02:35] Heat 1 tbsp mustard oil in a pan.
[02:59] Add besan (gram flour) to the oil on low flame.
[03:07] Roast the besan on low flame until fragrant.
[03:29] Turn off the gas.
[03:35] Add the prepared spice mix to the hot besan and mix well.
[03:54] Let the stuffing mixture cool down.
[04:04] Add salt to the mixture.
[04:10] Stuff the green chillies with the prepared besan-masala mixture.
[04:53] Heat 2 tbsp mustard oil in another pan.
[05:17] Turn flame to low-medium.
[05:22] Add mustard seeds and cumin seeds.
[05:28] Add the stuffed chillies to the pan.
[05:48] Sauté the chillies for about 2 minutes, ensuring they remain slightly crunchy.
[06:12] Add the leftover stuffing masala over the chillies.
[06:23] Mix well to coat the chillies with the extra masala.
[06:29] Cook for one more minute.
[06:45] Turn off the gas.
[06:51] Squeeze fresh lemon juice over the chillies and mix.
[07:14] The masala mirchi fry is ready to serve.
